Our fine extra-virgin olive oil are blends of the local olives types, Minucciola, Rotondella and Frantoio grown on ur farm, "Le Peracciole". The olives are picked by hand in the month of October - long before they would hae fallen to the ground - and cold-pressed within twenty-four hours. We choose not to filter this pure oil, but to decant in naturally so that it loses none of its flavours or health-giving elements; the acidity level remains under 0,4%.
Olio Extravergine di Oliva "Le Peracciole" is sold bottled in two sizes: 0,250 l (about 2.000 bottles) and 0,500 l (about 3.000 bottles). It has a strawyellow colour with green highlights, with perfumes of mountain broom, artichokes and wild rocket; its flavour is very delicate and harmonious, with a light bite to its aftertaste. This ia a medium-fruit oil which we suggest be used for cooking and as a base for sauces.
